How to make pizza cookie? Simple! Pizza Cookie3/4 cup butter or margarine, softened1 cup granulated sugar1 egg1 1/2 cups all-purpose flour1/2 teaspoon baking soda1/4 teaspoon salt1/4 cup cocoa1 teaspoon vanilla extract3/4 cup candy-coated chocolate pieces, divided1/2 cup chopped pecans, divided1/4 cup flaked coconut1/2 cup miniature marshmallowsLine a 12-inch pizza pan with heavy-duty aluminum foil; grease foil and set aside. Cream butter; gradually add sugar, beating well at medium speed of electric mixer. Add egg and beat well.Combine flour and next 3 ingredients; add to creamed mixture, mixing well. Add vanilla extract and mix well. Stir in 1/2 cup chocolate pieces and 1/4 cup chopped pecans. Spoon batter onto prepared pan, spreading to within 1 inch of edge. Sprinkle with coconut and remaining 1/4 cup pecans. Bake at 350 degrees F for 15 minutes. Sprinkle marshmallows and remaining 1/4 cup chocolate pieces on top. Bake an additional 5 to 7 minutes. Cool on a wire rack.To serve, cut into wedges. Cheese Souffle (Soufflé au Fromage)Serve with a lettuce salad and crusty French bread.1/4 cup butter or margarine1/4 cup all-purpose flour1/2 teaspoon saltDash of ground red pepper1 cup milk1 cup shredded Swiss or Gruyère cheese4 eggs, separated1/4 teaspoon cream of tartarHeat butter in 2-quart saucepan over low heat until melted. Blend in flour, salt and red pepper. Cook over low heat, stirring constantly until mixture is smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in cheese until melted; remove from heat.Preheat oven to 325 degrees F.Beat egg whites and cream of tartar in large mixer bowl until stiff but not dry. Beat egg yolks in small mixer bowl until very thick and lemon-colored, about 5 minutes; stir into cheese mixture. Stir about 1/4 of the egg whites into cheese mixture. Fold cheese mixture into remaining egg whites.Carefully pour into greased 1 1/2-quart soufflé dish or casserole. Bake uncovered until knife inserted halfway between center and edge comes out clean, 50 to 60 minutes. Cream Teas (Scones)Always serve on pretty doilies, use pretty pots for the preserves and a special spoon for the preserves.2 cups all-purpose flour1 1/3 tablespoons butter (at room temperature)1 1/2 tablespoons superfine sugar1/4 teaspoon salt1/2 cup raisins (optional)2/3 cup fresh milkFlour (for rolling out)1/2 pint heavy creamPreheat oven to 425 degrees F.Sift flour into a large mixing bowl and then rub in the butter, using your fingers, until it resembles coarse meal. Stir in the sugar, salt and raisins, if desired. Then add milk slowly, stirring with a fork. Use your hands to finish the mixing process and knead the mixture to a soft dough. If you’re in a low humidity area, you may need to add a little more milk. Turn the dough out onto a lightly floured working surface and roll out to about a 3/4-inch thickness with a rolling pin. Cut scone shapes using a crinkled pastry cutter. Make firm cuts. When you’ve cut as many as you can, knead the mixture again and continue to cut until all the mixture is used up. Place scones on a greased baking sheet, leaving a little space between each, and bake for 12 to 15 minutes until golden brown. Turn out on a wire cooling rack.To serve, slice horizontally in half. Spread a little butter onto the surface, then spread on a glob of strawberry or red raspberry preserves. Pipe on a good helping of whipped heavy cream using a pastry bag and a large star-shaped tube. Place each half on an oval serving plate on which you’ve placed a white napkin or doily. Eat while hot. Serve with a pot of freshly brewed loose-leaf tea. How to make chicken paprikash? Simple! Chicken Paprikash2 whole fryer chickens, cut up 1 medium onion, dicedSweet Hungarian paprikaVegetable oil 8 to 12 ounces sour cream 2 cans chicken brothSpaetzle (Sinkers)3 to 4 cups all-purpose flour 6 to 8 eggsPinch of saltWater, if necessarySauté onions in about 1/3 cup vegetable oil in a large skillet over medium heat. Add 1/3 cup of paprika, being careful not to let it burn.Place chicken in skillet to fry, dusting one side again with paprika. Brown about 6 to 8 minutes, turning occasionally. Take chicken out and place in roasting pan.Add chicken broth until it covers chicken. Cover the pan and bake at 375 degrees F for about 2 hours or until the chicken is tender.Remove chicken from roaster. Cover and set aside. Put roaster on top of stove and bring remaining contents to a slow boil.Gravy: Mix sour cream into some of the hot broth from roaster, whisking until smooth. Add back into roaster with boiling broth.Pre-mix flour, water and salt. Whisk until smooth. Gravy should have a nice salmon color. Add more paprika if desired.Spaetzle: Mix ingredients in a bowl. Dust hands and mix with flour. Knead into a ball. Flatten to about 1/8 inch thick.Boil chicken broth in a pot. Keeping a spoon wet, section off pieces of spaetzle dough. Cook in the broth for about 3 to 6 minutes.Place chicken and spaetzle on a plate and cover with gravy. Natchitoches Meat Pies with Pepper JellySource: The Advocate - Baton Rouge, LouisianaFilling2 pounds ground sirloin2 pounds ground pork1/2 teaspoon salt1/2 teaspoon black pepper1 tablespoon red pepper1 cup chopped green onion1/3 cup all-purpose flourVegetable oil for fryingCrust2 cups self-rising flour1/3 cup Crisco shortening1 egg, beaten3/4 cup milkCook ground sirloin and pork until it crumbles. Add salt, black pepper, red pepper and green onions. Stir in all-purpose flour. Set aside to cool.Sift self-rising flour into a large bowl. Cut shortening into flour. Add egg and milk. Form dough into ball.On a floured board, roll about a third of the dough about 1/4-inch thick. Cut dough in circles about 3 inches in diameter. Place a heaping tablespoon of meat mixture on each circle. Dampen edges. Fold over filling. Crimp edges with a fork and prick with fork on top. Deep fry at 350 degrees F until golden brown. Serve with Pepper Jelly (recipe follows).You may need to repeat the crust recipe three or four times to use all of the meat mixture.Freezes well. Place uncooked pies on cookie sheet in freezer until set. Put in reclosable plastic bags and freeze.Makes about 90 to 100 meat pies.Pepper Jelly2 cups finely chopped bell peppers20 to 25 jalapeño peppers, some but not all of the seeds removed7 1/2 cups granulated sugar1 1/2 cups white vinegar1 (6 ounce) box Certo pectinChop peppers very fine. Place peppers, sugar and vinegar in a tall pot and bring to a boil. Boil 7 to 8 minutes, then add both pouches of Certo pectin. Boil for 1 to 1 1/2 minutes. Put into sterilized jars and seal.Makes 9 to 10 half-pints.Serve with Natchitoches Meat Pies. Also very good over cream cheese and served with crackers.
