Nonstick pans produce anemic, soft corn bread. This recipe also works well with corn stick or muffin molds, as long as theyâre well-seasoned cast iron. If your pan is hot enough, the batter will immediately rise and start to cook around the edges. (The restaurantâs skillets rarely leave the oven.)1 1/2 cups yellow cornmeal (preferably stone-ground)3/4 teaspoon baking soda1/2 teaspoon coarse salt2 large eggs1 3/4 cups well-shaken buttermilk1/4 cup (1/2 stick) unsalted butter, softenedBuckwheat-Honey ButterPreheat oven to 425 degrees F. Put a dry, well-seasoned 9- to 9 1/2-inch cast-iron skillet in middle of oven to heat.Stir together cornmeal, baking soda, and salt, crushing any small bits of baking soda. Whisk eggs in another bowl until blended and whisk in buttermilk.Remove hot skillet from oven carefully and add butter, swirling gently to coat bottom and sides of skillet. (If butter begins to sizzle and brown around edges, so much the better.)Whisk hot butter into buttermilk mixture and return skillet to oven. Stir cornmeal into buttermilk mixture just until moistened. (The batter does not have to be smooth â a few small lumps are good.)Scrape batter into hot skillet and bake until golden, 20 to 25 minutes. Invert skillet over a platter and cool bread at least 3 minutes.Serve with Buckwheat-Honey Butter.Serves 8.Buckwheat-Honey Butter1/2 cup (1 stick) softened unsalted butter2 tablespoons buckwheat honey (or pure maple syrup)Combine both ingredients. Natchitoches Meat Pies With Pepper JellyHow to make natchitoches meat pies with pepper jelly? Simple! Natchitoches Meat Pies with Pepper JellySource: The Advocate - Baton Rouge, LouisianaFilling2 pounds ground sirloin2 pounds ground pork1/2 teaspoon salt1/2 teaspoon black pepper1 tablespoon red pepper1 cup chopped green onion1/3 cup all-purpose flourVegetable oil for fryingCrust2 cups self-rising flour1/3 cup Crisco shortening1 egg, beaten3/4 cup milkCook ground sirloin and pork until it crumbles. Add salt, black pepper, red pepper and green onions. Stir in all-purpose flour. Set aside to cool.Sift self-rising flour into a large bowl. Cut shortening into flour. Add egg and milk. Form dough into ball.On a floured board, roll about a third of the dough about 1/4-inch thick. Cut dough in circles about 3 inches in diameter. Place a heaping tablespoon of meat mixture on each circle. Dampen edges. Fold over filling. Crimp edges with a fork and prick with fork on top. Deep fry at 350 degrees F until golden brown. Serve with Pepper Jelly (recipe follows).You may need to repeat the crust recipe three or four times to use all of the meat mixture.Freezes well. Place uncooked pies on cookie sheet in freezer until set. Put in reclosable plastic bags and freeze.Makes about 90 to 100 meat pies.Pepper Jelly2 cups finely chopped bell peppers20 to 25 jalapeño peppers, some but not all of the seeds removed7 1/2 cups granulated sugar1 1/2 cups white vinegar1 (6 ounce) box Certo pectinChop peppers very fine. Place peppers, sugar and vinegar in a tall pot and bring to a boil. Boil 7 to 8 minutes, then add both pouches of Certo pectin. Boil for 1 to 1 1/2 minutes. Put into sterilized jars and seal.Makes 9 to 10 half-pints.Serve with Natchitoches Meat Pies. Also very good over cream cheese and served with crackers.
